Random Acts of Kindness

Today, while sitting at a stoplight, I notice the man from the truck behind me exit his truck and walk up to my car. He has something in his hand and motions for me to roll down my window, which I do. The gentleman congratulates me and hands me a 10 dollar bill. He walks back to his truck, the light turns green and off we go. WOW!


Needless to say, just minutes before I had been at lunch with the hubs and was complaining  about the chalk on my back window that reads "JUST MARRIED" and has been there for 6 months (yes, SIX), and how it was driving me crazy and I wanted it off. I guess today was my reminder to be thankful for what I have and to stop complaining :)


I almost wanted to feel guilty, but instead I plan on passing along a RAOK! Has you ever done a RAOK like this one or have you ever been on the other side- as the receiver?? I would love to hear your stories!  


As I was driving the rest of the way home and the mans truck disappeared as he went his own way I couldn't help but think what inspired him to do this?  Was he just so wealthy he had to give money away to a complete stranger? I doubt it, as he was traveling in his older model white F150 and was dressed in jeans and a t-shirt that read "Calloways"- which is a plant nursery here in town.  Or was he a follower of Christ who was passing along a blessing for me, from Jesus because He knew I was having a rough day? Part of me wants to go back to Calloways, see if the man works there and and return the favor or at least drop off a note to thank to man.  I was so overjoyed it is hard to explain.  I could not think of why a man that I didn't even know would give away his money.  
While all these things were running through my head I couldn't help now but reflect on the Cross, it brings me back to my knees to think of the sinless Savior, Jesus Christ, giving up his life (and God giving up his son), dying a horrible death on a cross for ME... a sinner who has a wicked heart! His grace is what saved me and brought me back to life and I hope that you too would reflect on such blessings in your life!


I hope this inspires you too to do a RAOK this week!! It is a truly amazing feeling to receive but more-so to give. 


Dear God, thank you for ALL the blessings, both large and small, that you continue to cover me in EVERY day!  Help me to always be mindful and thankful, for all things come from YOU! :)

This House is Divided!!!!!!

As a graduate from Baylor University I am a die-hard Baylor Bears fan! And by die-hard, I mean, I sport all the t-shirts, proudly wear my ring, have a nice BU emblem on the car along with a matching window sticker and even have Baylor plates on my car!

My hubby on the other hand is a die hard Duke fan.  
He sports all the attire and follows their sports teams' every move.  

 
Tonight is going to be an entertaining night here at our house! 
Oh yes! It's finally here!!

This afternoon BAYLOR plays duke for the FINAL FOUR!!! I hate to break it to everyone but THIS IS BEAR COUNTRY... and yes, that means that Duke is going down.  :) Luckily we have some extra bedrooms in the house... I kid, I kid! ha!

(In addition to this exciting game, our Baylor Lady Bears will also be playing Duke for the Final Four- for the FIRST TIME IN HISTORY a double match-up!) Sic Em Lady Bears too!




So here's to my BEARS ... B-B-B-A-Y, L-L-L-O-R, B-A-Y, L-O-R, BAYLOR BEARS FIGHT!!

It's whats for dinner :)


check out this awesome EASY recipe from Southern Plate!

How about a lil grilled chicken, cream of mushroom soup, cream of chicken soup, some diced green chilies, and some diced tomatoes, grilled onions, some yummy seasoning and CHEESE! 

It doesn't matter that I'm a Texas girl, admit this plate just LOOKS delish! (again pic from here)


So be my guest and try it for yourself :) I'll post the recipe here but thanks so much to Southern Plate for always making my dinner such a delicious one! :)

King Ranch Chicken Casserole

  • 1  onion, chopped
  • 2  tablespoons  vegetable oil
  • 2  cups  shredded cooked chicken
  • 1  can cream of chicken soup*
  • 1  can cream of mushroom soup*
  • 4 ounce can diced green chilies
  • 15 ounce can diced tomatoes, drained
  • 1  teaspoon  chili powder
  • 1/4  teaspoon  salt
  • 1/4  teaspoon  garlic powder
  • 1/4  teaspoon  pepper
  • 12 – 14 corn tortillas (six inch)
  • 2  cups  shredded cheddar cheese
Place oil in large skillet. Add onions and saute over medium heat until onions are lightly browned. Add chicken, cream soups, chilies, tomatoes, and all seasonings. Stir and cook over medium heat until bubbly.
Tear tortillas into small pieces. Place half of pieces in 9×13 inch dish. Top with 1/2 of chicken mixture and 1/2 of cheese. Top with remaining tortilla pieces, remaining chicken mixture, and remaining cheese. bake at 350 for thirty minutes, or until bubbly and lightly browned around the edges.
*Can use fat free
Can assemble this the night before, store in the fridge, and bake when you get home!

bragging rights, SIC EM!

Just had to blog that I finally was able to complete one full day of The Shred! WAHOO! Hubs was a great sport and started out doing it with me but I think he quickly realized it was no joke.  Yay me for actually finishing the workout! Now I just need to keep it up.  :)


Hope you all are enjoying March Madness, I am sure proud of my BAYLOR BEARS for their win! Keep up the good work men!

new look, weight updates, & special visit!

Hi friends,
Well I was feeling the need for change so tah-dah! Just as I'm making the changes Hub's accuses me of "overhauling a blog I don't write in" ... sad day! I'm sorry guys! I don't know where the time goes! Anyways... hope you like the new look!  OH and I have a question for all of you avid bloggers... can someone tell me how to make my page into 3 column's??
So quick update on The 30 Day Shred... well... um I have done it all of 3 or 4 times. Darn! I still want to keep trying to get better at it as I have already noticed how much easier gets as I go about it... I'm not saying EASY, just a little easIER... as if I don't get scared that death is hovering over me while I attempt to do several minutes of push-ups ha!
But on a more positive note... I have managed to stay away from ALL sodas and anything most things carbonated, minus beer. :)  I am so impressed with myself as it has been about 2 weeks now.  Let me just tell you my cravings were soooo bad the first week and a half, and don't get me wrong I still daily wish for a Dr. Pepper with lime but I'm not crrraving it.  Go me.  I will admit that I do not think that I could have done it without the support of K... he also has been going without and he is my strength! I don't want to be weak when he is strong and vice versa so neither of us have given in... so far.  The only sad side of the story is that neither of us have lost an ounce :( sad. day.  I seriously thought after drinking at LEAST 32 ounces of DP a day I would lose sooome weight, but not yet.  I hear rumors surrounding I must wait for at least 21 days and then is when the change comes.  I have been watching what I eat and trying to be better but I am not on a so called "diet".
Juice Plus... do you all remember how excited I was about this stuff several months back? (read more here and here.) Well sad to say, it hasn't really lived up to my expectations.  I must admit that the first month or so I did great taking the two pills two times a day but after about a month I couldn't remember for the life of me to take the supplements.  Grrr thank you A.D.D ha! I am going to try to get back on them though... I think overall they are good for me, and I figure I have them so I ough take them.

The past week K's siblings (all but one :'( ... ) came out here to vacation, Spring Break '10!   We had a BLLLLAST to say the least!  A preview from the week-- My new header pic on here!  K and I on the 30 yard line at the BRAND NEW COWBOYS STADIUM! yuuup we toured the entire amazing place, including the Dallas Cowboys locker room, AND the Dallas Cowboys Cheerleaders locker room. We did sooo much in the short visit we had with them... Check back soon for photos from the entire week of fun! :) Here is one more preview pic! :) (and yes, it IS real!)
